NUTTY WATERGATE COOKIES WITH PECANS

We’re celebrating by whipping up some deliciously green pecan goodies. These nutty cookies take a unique marshmallow and coconut flavor inspiration from a surprising source.

Ingredients

Pistachio Pecan Cookies

1 box yellow cake mix

1 – 4 serving size pistachio pudding

½ cup of unsweetened shredded coconut

½ cup of chopped pecans

2 large eggs

½ cup of canola oil

INSTRUCTIONS

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  2. Using a mixing bowl, beat together all ingredients until combined.
  3. Scoop some cookie dough onto parchment paper or a baking mat lined cookie sheet.
  4. Bake the cookies in the oven for 10-12 minutes or until the cookies are lightly browned.
