At the end of December 2014, the Specialty Foods Association presented its predictions for 2015. Statistics suggest that six out of 10 US buyers get specialty foods on a regular basis. The number is expected to grow in 2015, and here are several of the most interesting trends that will be affecting the field.

Alternative Butters

Many experts believe that the reign of peanut butter in the alternative range is almost over. Mammoth pecans, oatmeal butter, Concord grape butter and cashew butter are gaining a lot of prominence. Many other nuts and seeds apart from pecans are being used in the production of specialty butters. The customer curiosity about such products is also growing.

New Proteins

The protein field is also getting diversified with many new specialty foods gaining prominence. The Specialty Foods Association predicts that cricket flour and plant-based meat or cheese products will become mainstream in 2015.

Pecan nuts are also a source of protein. With certified kosher pecan nuts, a variety of people are enjoying the health benefit of pecans in snacks.

Natural Sweeteners

Stevia became the first and probably the most popular natural alternative to sugar and artificial sweeteners. This specialty food niche is also seeing some great diversification. Natural sweeteners are poised for growth. Sweet proteins, erythritol and yacon syrup are expected to start stealing market share from traditional products and the notorious artificial sweeteners.

Pecans also act as a natural sweetener. They blend well with other flavors and reduce the amount of sugar needed in a recipe. Pecans have a natural sweetness they give to recipes.

New Superfoods

The constantly expanding superfood field falls under the specialty food range, as well. Several new super items are expected to rise to stardom. Some of the contenders include soursop, baobab and kaniwa – an ancient supergrain that will eventually become the next quinoa.

From butter made of pecan nuts to unorthodox proteins – specialty foods will give customers some exciting new options in 2015. There are other trends to watch as well, making specialty foods an even bigger and more prominent market.
